Magic Curry Base

Makes cooking curry a breeze.

Servings: 4+ Prep Time: 2 min Cooking Time: 10 min

Ingredients

  • 2 Tomatoes
  • 1 Onion
  • 1 tsp Salt
  • 1 TBSP Turmeric
  • 1 cup Cashew

Directions

  1. Rough chop tomatoes and onion
  2. Heat a pot on medium heat, add all the ingredients
  3. Add enough water to barely cover the surface
  4. Stir and bring to a gentle boil
  5. Cover and cook until tomatoes are fully mushy, and onions are transparent and chunky, around 5 minutes
  6. Drain excess water. Allow to come back to room temperature
  7. Blend to a smooth paste

Stays fresh in the refrigerator for upto 4 days, makes 3-4 curries to serve 12-16 people.
